Back when my husband and I were first dating, we used to go to the grocery store and grab random items to whip up a meal as a fun stay-at-home date. We used an app called the Dinner Spinner, which would allow you to select a main ingredient you had on hand and then show you what all you could make. It was on one of these dates that the dinner spinner gave us a recipe for vegetarian chili. If you know my husband, vegetarian chili was a deal breaker. Still, it sounded interesting enough that we made some changes to the recipe and gave it a shot. That night, our very first family recipe was born! This easy weeknight chili is a staple in our home, and we think it will be in yours, too!
The secret to this chili’s amazingness is the ranch seasoning! Trust me, you will love it! This easy weeknight chili can be whipped up in 15 minutes, but if you have time, let it simmer a bit for increased yumminess! As an added bonus, this is a one-dish dinner, so hooray for easy cleanup! While it’s not full of from scratch ingredients, it is full of easy pantry items that can be kept on hand to save you from a night of ordering out or running through the drive-thru. Your waistline and wallet will thank you!
1 pound lean ground beef
16 oz can Chili Beans (use mild if you want less kick)
14.5 oz can Petite Cut Diced Tomatoes with Zesty Jalapenos
16 oz can Great Northern Beans (drained)
1 oz packet Hidden Valley Original Ranch seasoning packet
1 oz packet Taco Seasoning (we like Old El Paso, low sodium)
- Brown beef in saucepan; drain excess grease
- Add in can of chili beans and can of diced tomatoes
- Drain can of Great Northern Beans and add to pan
- Dump in ranch seasoning packet and taco seasoning packet
- Stir well and enjoy! If time allows, simmer chili on low 30 minutes or more to allow flavors to blend
We like to top this chili with cheddar cheese and sour cream, or with plain greek yogurt and avocado slices. If you want to make it stretch, add it over pasta or a baked potato!
